Evangelion isn't really all that complicated once you step back and look at it in chronological order. But the problem is that it just takes place over so much time.

The problem is, the plot is poorly fleshed out. There were several plot elements I could only figure out after looking it up on the Wiki. Like Lilith and Adam. They explain that the two exist, but they don't really go into too much detail as to what their purposes are.

Yes they did. They were both created to spread life on a planet. Adam was doing just fine with that up until lilith came in like a wrecking ball. The lance of longinus was created as a fall back mechanism in case two "seeds of life" landed on the same planet as if they both combined they would become god and be an issue for the people that created it. However since Lilith's lance broke on impact Adam's stabbed him and placed him in a dormant state allowing lilith to create her own life in the form of the primordial soup.
What happened in second impact was that they removed the lance of Longinus from Adam which caused him to wake up and be like "That bitch done took over my earth, I'll show her!" and created a giant anti AT field which caused everyone in the katsuragi expedition to get tanged. However that caused his s2 engine to go unstable which caused the melting of antarctica.

And where was that explained in the show, exactly? Because I had to look that part up on a Wiki. I don't remember any instance of End of Evangelion or the TV show where they explained about the divergent paths about Adam and Lilith. They spoke about how the Angels were one potential outcome of what humanity could be, but after watching the entire series like 4+ times, I can't think of any instance where they actually described what you said.

Point taken. Evangelion has its flaws and it's story telling isn't the greatest but its characters and the way that they interact with one another more than make up for it in my opinion.
